Experience Overview

Lucknow does not rush its food, and neither should you. Awadhi cooking grew in nawabi kitchens where chefs competed to make meat softer, spice subtler, aroma longer. Five days here move between Chowk and Aminabad’s old eateries and a private home kitchen, learning why this cuisine is spoken of in whispers rather than shouts. No visa needed.

You eat galawati and kakori kebabs, minced and tenderised until they need no teeth. Biryani and korma come dum-cooked, sealed under dough so nothing escapes. Nihari-kulcha at dawn, sheermal and warqi paratha from the tandoor, and in a nawabi home, subz galawat and dum aloo showing the vegetarian side properly.

Awadhi food carries the dastarkhwan tradition, where courses arrived in careful sequence and balance mattered more than heat. Dum-pukht, cooking on slow steam under a sealed lid, came from feeding pilgrims during a famine and stayed for its depth. Kewra, saffron and screwpine perfume the rice; the food is meat-forward but never loud.

Some moments are built for lingering: a galawati kebab dissolving before you have decided to chew; the seal breaking on a dum handi and saffron steam rising; warm nihari on a cold Chowk morning; a betel paan folded fresh, ending the meal the way Lucknow always has, unhurried.

Is there proper vegetarian and Jain food, given Awadh is so meat-forward?

Yes, and it is better than most expect. Awadh has a genuine refined vegetarian tradition — subz galawat made from lotus stem or raw banana, dum aloo, nadru and kathal dishes cooked with the same care as the kebabs. We brief the home kitchen in advance. Jain travellers are looked after too, with onion and garlic left out and a dedicated plate cooked separately.
